Cajun meatball stew is one of those meals that I love to eat but it is hard to find the time to be able to spend the day in the kitchen cooking.  I have taken a few other recipes also and adjusted a few things so that you can also prepare it in the Instant Pot on those days you are craving a home cooked meal but have a busy schedule.

If you have never tried Cajun Meatball Stew it is made with a brown roux gravy and served over rice.  It is very similar to gumbo.  You can check out our Instant Pot Gumbo recipe here.  It has also been adapted to the Instant Pot so it can be prepared in about a half an hour rather than a couple of hours.

Most people make their meatballs by hand with ground meat, bread crumbs, and an egg.  I have found a quicker and easier way.  We buy our grocery stores pre-seasoned hamburger patties from the meat department.  When I am ready to cook just split the hamburger patties in half and form a ball with them.  It is just as simple as that!  No mixing in all the other ingredients.  They cook perfectly just like this.  I do have to mention though our grocery store uses Cajun seasoning when forming the hamburger patties.  So if you don’t live in an area that does this then you should order some of Tony’s Chachere’s Seasoning for you to prepare yours.

We use the 8 qt. Instant Pot to prepare all of our meals.

We also use a digital cooking thermometer like this.  If you have any question about what temperature something should be cooked at or reheated at you can check out FoodSafety.gov.

Final Thoughts

Instant Pot Cajun Meatball Stew is definitely comfort food.  It is very common for people to also add boiled eggs or potatoes to this dish.  It is a very delicious and filling meal that is also very easy to prepare.  I hope your family enjoys it as much as mine does!
