Instant Pot Shrimp Fajitas

Equipment

  • Pressure Cooker - Instant Pot

Ingredients
  

  • 2 lbs Raw Shrimp Peeled
  • 1 packet Frontera Taco Seasoning Packet You can substitute for any taco seasoning packet
  • 2-3 Bell Peppers Sliced into strips
  • 1 Large Onion Sliced into strips
  • Tortillas
  • Toppings of Choice optional
  • 1 tbsp Tony Chachere's optional

Instructions
 

  • First, place your raw, peeled Shrimp into your Instant Pot.  Mix
    with Frontera Liquid Taco Seasoning pack.  **Please note- if you prefer using a different
    fajita seasoning that is dry you will need to add ½ cup of water also.
    If you like your food seasoned well you can add 1 tbsp of Tony Chachere's in this step.... but totally optional.
  • Next, place your sliced bell peppers and onion on top of your shrimp.  **Please note- You will want to slice your bell peppers into wider sections than you
    would for regular fajitas in order to keep them from falling apart in the Instant Pot.
  • Then close your Instant Pot lid and turn the steam release valve to the “Sealing” position.
  • Pressure cook on high for 2 minutes.
  • After the timer has completed turn the steam release valve to “Venting” for a quick release of steam.  **Warning – The steam is very hot, use a towel to turn the release valve so it does not burn you.
  • Serve with your warm tortillas and any additional toppings you prefer.  We like shredded lettuce, cheese, salsa, and sour cream!
