This is a super easy recipe and we will keep this post the same, short and sweet!

Potato Salad used to be something that took forever to prepare.  You had to peel the potatoes, cut them, and boil them.  It would take an hour at the least.

But if you use Easy Baker Idaho Potatoes that come prewrapped in clear plastic wrap, it cuts the prep work down to only a few minutes.  Instead of boiling the potatoes, you cook them in the microwave just as instructed on the label.

Once they are done you just spoon out the insides and mix with your remaining ingredients!  No more peeling, boiling and mashing the potatoes!

This quick & easy potato salad recipe is enough for four servings.

 

 

Ingredients – Quick & Easy Potato Salad

  • 2 Easy Baker Idaho Potatoes
  • 4 Eggs
  • 1 Tbsp.  Mustard
  • 3 Tbsp.  Mayonnaise
  • 1/2 Tbsp. Salt

 

 

Directions

#1. First, cook two large potatoes (prewrapped) in the microwave for about 10 minutes.

#2.  Next, boil 4 eggs on the stove for about the same.

#3.  Then separate your egg yolk and mix it with mayo, mustard, and salt for your sauce.

#4.  Next, spoon the cooked potatoes out and mix with diced egg whites and your sauce.

#5. That’s it! Now Enjoy!

  • 1 tbsp Mustard
  • 1/2 tbsp Salt
